Seriously. I'm not lying. And it's easy.
Have you seen those memes that says something like:
"Homemade dinners, because I was feeling good about my parenting and needed to be reminded that I'm actually failing"?
This is just about every day in our house. #hardtruth, I have said more than one time that I'd rather be in a really difficult client meeting than tell our kids what I'm making for dinner.
I think there might be like, I don't know, five recipes that all three kids will eat. And this Buttermilk Roasted Chicken recipe from Sips, Nibbles & Bites is one of them. I recently shared it with my parents and they loved it too.
I modify it slightly (see below for my changes) and it's always a winner. Our favorite sides are carrots roasted with a little bit of olive oil and baby dutch potatoes, sliced in half, also roasted with olive oil, salt and pepper and whole garlic cloves (skin on). Super easy, delicious and even #glutenfree.
The recipe is great as-is, however, here are some of my changes:
-Half the amount of roasemary (my husband isn't the biggest fan!)
-McCormick Grill Mates BBQ Rub. (my brother is a #KCBS competitive BBQ-er, and would probably be horrified to know I use this instead of something more authentic, but it tastes great and they have it at Wegman's)
-Use a whole, quartered chicken. It cooks faster and is easier to serve.
